Carmel, IN – Julie Bolejack sits as silently as a yogi in mediation behind the counter at her fledgling Chocolate for the Spirit shop in Carmel. The barely audible crinkle of gold foil she’s wrapping around almond-studded chocolate bars is the only sound — until a customer walks in the door.
The woman’s request for a box of assorted truffles gets Bolejack gabbing about salted caramel ganache truffles and Jameson whiskey-spiked pumpkin truffles.
“These are chai tea. These are 38 percent Venezuelan milk chocolate. These are gingerbread. These are strawberry raspberry.”
